Zander fillets from Lake Murten

Predatory fish native to the Danube basin and living in the fresh waters of Lake Murten, zander is known for its delicate meat appreciated as fillets or deep-fried.

Named after the German "Zahn", meaning "tooth," zander is a predatory fish considered suspicious and difficult to fish. Present in the lakes of Murten, Gruyère and Neuchâtel, zander is widely available on the menu of restaurants in the region of Avenches and the many events taking place there.
Ideally served with a mineral and slightly acidic white wine, such as a chasselas from the Vully vineyard, the zander is then filleted, accompanied by a light sauce that enhances the delicacy of its subtle and light meat.
Accompanied by a salad and tartar sauce, the frying of zander is one of the essential dishes served during the events that take place throughout the year in the region of Avenches.
